- 1 1/4 cups elbow macaroni
- 12 ounces lean ground beef
- 1/4 cup chopped onion (about 1 small)
- 1 package (8 ounces) shredded Cheddar cheese
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1/3 cup ketchup

Preheat oven to 350°F. Lightly coat a 11/2-quart casserole dish with nonstick cooking spray. Cook the macaroni according to the package directions until just tender. Drain.
Meanwhile, cook the beef and onion in a large skillet over medium heat until browned and crumbly, 8–10 minutes. Drain.
Combine the Cheddar with the flour in a medium bowl. Heat the milk in a medium saucepan until bubbles begin to form around the edge of the pot. Add the cheese mixture in small amounts to the hot milk, whisking after each addition. Cook and stir until the cheese is melted and the mixture thickens slightly. Remove from heat.
Combine the cheese sauce and ketchup with the beef mixture. Add the macaroni and stir until combined. Transfer to the prepared dish. Bake until hot and bubbly, 35–45 minutes. Let stand for 5 minutes before serving.
