Ingredients
- olive oil for sautéing
- 1/4 cup diced onion
- 1/4 cup diced red pepper
- 1 celery stalk, diced
- 1 can (28 oz.) chickpeas, rinsed & drained
- 1 tsp. thyme
- 1 tsp. paprika
- pinch of cayenne pepper
- 1 tsp. hot sauce
- 2 Tbs. chopped fresh parsley
- 2 Tbs. flour
- 1 Tbs. cornstarch
- salt & pepper (to taste)

Preparation
Step 1
1. With a little olive oil, sauté onion, green pepper, and celery for 5 minutes until translucent.
2. Use a fork or food processor to mash chickpeas, but not too much; mix in cooked onion, celery and pepper mixture, spices, flour and cornstarch; refrigerate for at least 30 minutes. (Note: If you’re pressed for time, the mixture can be made in advance and kept in the fridge until you’re ready to grill them.)
3. Shape chickpea mixture into patties and grill or fry with minimal oil until browned. Makes approximately 12 cakes.
