Peanut Butter Truffles
- 1 package Nutter Butter cookies
- 1/2 cup crunchy peanut butter
- 1/2 package light cream cheese
- 1 lb block Ambrosia chocolate, semisweet
Crush cookies and pour into a mixing bowl. Stir in peanut butter and cream cheese. Shape dough in to balls; set aside. Melt chocolate in double broiler. Dip cookie balls in chocolate and allow excess chocolate to drip off and gently place on waxed paper lined baking sheet. Cool, place in storage container and store in refrigerator.
