Ingredients
- 4 fresh Hatch Green Chilies, roasted and peeled
- 4 oz cheddar cheese
- 8 pieces of bacon

Preparation
Step 1
1. Stuff each pepper with 1 oz of cheddar cheese, and fold pepper around cheese.
2. Wrap with 2 pieces of bacon, and lay on a baking sheet.
3. Bake in preheated oven until bacon is crispy, about 10 - 15 minutes.
