Roast Rack of Lamb

Ingredients

  • 2 racks of lamb
  • 2 C bread crumbs
  • 1 C chopped parssley
  • 4 crushed garlic crushed
  • 2 t salt
  • 2 t rosemary
  • 1/2 t pepper
  • 1/2 C olive oil

Preparation

Step 1

Trim fat from racks
Check that backbone is cracked for carving.
In med. bowl combine bread crumbs, parsley, garlic, salt & pepper & rosemary. Toss to mix, then add oil & toss again. Place rack with ribs down on roasting rack. Pat 1/2 of mixture over meat side of each rack, pressing to hold in place. Wrap with plastic wrap & refrigerate overnight. One hr. before roasting, unwrap & let stand at room tetmperature.
Preheat oven to 400. Roast 30 min for rare
