BOIL SYRUP SLOWLY WITHOUT STIRRING
UNTIL SYRUP SPINS A 6" TO 8" THREAD
(240º - 242º). KEEP SAUCEPAN COVERED
FIRST 3 MINUTES TO PREVENT CRYSTALS
FROM FORMING ON SIDES OF PAN.
WHILE SYRUP IS COOKING, BEAT EGG WHITES
UNTIL STIFF ENOUGH TO HOLD A POINT
POUR HOT SYRUP VERY SLOWLY IN A THIN
STREAM INTO STIFFLY BEATEN EGG WHITES,
BEATING CONSTANTLY.
ADD VANILLA AND CONTINUE BEATING UNTIL
FROSTING HOLDS ITS SHAPE. SPREAD
BETWEEN LAYERS AND ON TOP AND SIDES.
