D's Turkey (or Chicken) Noodles

Ingredients

  • 1/2 c. butter
  • 1/2 onion, diced
  • 1/2 bell pepper, diced
  • 1 4-oz. can mushrooms
  • 3 T. flour
  • 1 1/2 c. chicken broth
  • 3/4 c. milk
  • 1/4 c. half and half
  • 2 or 3 c. leftover, cooked, diced turkey or chicken
  • 1/2 can Campbell's cream of mushroom with roasted garlic soup
  • 1/8 c. dry white wine
  • 1 t. lemon juice
  • 4 slices deli swiss cheese
  • 1/8 c. parmesan cheese
  • salt and pepper to taste
  • 1/2 t. poultry seasoning
  • 1/8 t. nutmeg or cajun seasoning (optional)
  • Chopped, fresh parsley
  • 1 pkg. egg noodles

Step 1

Melt 1/4 c butter in small pan. Saute onions, mushrooms and bell pepper until tender, about 5 minutes. Set aside.

Melt remaining 1/4 c butter in large skillet. Add flour and cook on med-high until roux is lightly browned. Reduce heat to medium and quickly stir in broth, milk and half and half, stirring/whisking until smooth. Stir in soup.

Add vegetables and turkey. Cover and simmer until hot and thickened, about 10 minutes. Tear cheese into small pieces and add wine, lemon juice, swiss cheese and parmesan. Stir and simmer until cheese is melted. Stir in salt/pepper, poultry seasoning, nutmeg or cajun spices. Stir and reheat until cheese is melted. Add more milk or water if too thick.
Cook noodles according to instructions on package. Drain.

Put 1 cup noodles on plate and cover with sauce on top. Add parmesan and parsley to garnish. Serve hot.
