Ingredients

  • FOR PIE:
  • 1 stick unsalted butter, softened
  • 1 cup packed dark brown sugar
  • 1 large egg
  • 1 teas vanila extract
  • 2 cups plus 2 tblsp self rising flour
  • 1/3 cup cocoa powder
  • 1 teas baking powder
  • 1/2 teas salt
  • 1/2 cup buttermilk
  • 1/2 cup sour cream
  • 1/3 cup hot (not boiling) water
  • FOR FILLING:
  • 7 1/2 oz jar marshmallow fluff
  • 1 stick unsalted butter, softened
  • 1 2/3 cups confectioners' sugar
  • 1 teas vanilla extract
  • 3 tblsp milk

Preparation

Step 1

1. Preheat the oven to 350.

2. To make the pies, cream together the butter and brown sugar in a mixing bowl for 2-3 minutes using an electric handheld mixer, until light and creamy. Add the egg and vnailla extract and mix again. Sift the flour, cocoa, and baking powder into the bowl and add the salt, butter milk, and sour cream. Whisk again until everything is incorporated. Add the hot water and whisk into the batter.

3. Put a large spoonful of batter into each hole in the prepared pans or use 2 cookie sheets and pipe onto parchment paper into 2.5 inch diameter circles. Leave to stand for 10 minutes then bake each pan in the preheated oven to 10-12 minutes. Remove from the oven, let cool slightly then turn out onto a wire rack to cool completely.

4. to make the filling, whisk together the marshmallow fluff and butter in a mixing bowl using an electric handheld mixer. Sift in the confectioners' sugar, add the vanilla extract and milk and whisk again for about 3-5 minutes, unti light and creamy. Spoon the filling into the prepared piping bag and pipe a generous swirl of fililng onto 12 of the whoopie pie halves. Top with the remaining pie halves and your whoopie pies are ready to enjoy.
