Ingredients
- 1 teaspoon garlic salt
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano, crushed
- 2 tablespoons olive oil
- 1 medium red pepper, cut into thin strips
- 1 medium onion, chopped
- 2 chipotle peppers in adobo sauce, drained and chopped
- 1 pound boneless beef loin steaks
- 1 medium tomato, seeded and chopped

Step 1
1. In a small bowl, combine garlic salt, cumin and oregano.
2. In a large skillet, heat 1 tablespoon olive oil over medium-high heat.
3. Add 2 teaspoons of the spice mixture, the red peppers, onion and chipotle peppers.
4. Cook for 2-3 minutes or until vegetables are just tender, stirring occasionally.
5. Using a slotted spoon, remove the vegetables.
6. Add remaining spice mixture, oil and meat in same skillet.
7. Cook over medium-high heat about 4 minutes on each side, or until meat is slightly pink in the center.
8. Transfer meat to serving platter, reserving drippings in skillet.
9. Thinly slice meat; keep warm.
10. Return vegetables to skillet.
11. Stir in tomatoes; heat through.
12. Spoon vegetables over meat.
13. Fill warm tortillas with meat mixture.
14. Roll up and serve.
