Ingredients

  • 4 cups (1 lb) shredded hash brown potatoes or frozen hash brown potatoes, thawed
  • 2 cups whipping cream
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/4 cup sliced green onions, (about 4 medium)
  • 1 tea. salt
  • 1/4 tea. pepper

Preparation

Step 1

Preheat oven to 350 degrees. Lightly spray four 1 cup ramekins or other baking dish (7x11 - increasing baking time by 12 minutes) with nonstick cooking spray.

Combine the has brown potatoes, cream, 1 1/4 cups cheese, onions, salt and pepper in large bowl. Mix well.

Spoon the potato mixture into the prepared dishes.

Sprinkle with the remaining cheese.

Bake until bubbly and golden brown and the potatoes are cooked, approx., 35-40 minutes (212 minutes more for 7x11 dish).
