Ingredients
- FOR PIE:
- 1 stick unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teas vanilla extract
- 2 1/2 cups self rising flour
- 1 teas baking powder
- 1/2 teas salt
- 1/2 cup buttermilk
- 1/2 cup sour cream
- 1/3 cup hot (not boiling) water
- FOR VANILLA BUTTERCREAM:
- 6 tblsp unsalted butter, softened
- 3 cups confectioners' sugar, sifted
- 1 teas vanilla extract
- 3 tblsp milk
- 4 tblsp raspberry preserve
- confectioners' sugar, to dust

Preparation
Step 1
1. Preheat the oven to 350.
2. To make the pies, cream together the butter and sugar in a mixing bowl for 2-3 minutes using an electric mixer, until light and creamy. Add the egg and vanilla extract and mix again. Sift the flour and bkaing powder into the bowl and add the salt, buttermilk, and sour cream. Whiska gain until everything is incorporated. Add the hot water and whisk into the batter.
3. Put a large spoonful of batter into each hole in the prepared pans or pipe in 2.5 inch diameter onto parchment lined cookie sheets. Leave to stand for 10 minutes then bake the pies in the preheated oven for 10-12 minutes. Remove from the oven, let cool slightly then turn out onto a wire rack to cool completely.
4. To make the vanilla buttercream, whisk the butter, confectioners' sugar, vanilla extract, and milk together in a bowl for 2-3 minutes, until light and creamy. Spoon the buttercream into the prepared piping bag and pipe a swirl of filling onto 12 of the whoopie pie halves. Put a teaspoon of raspberry preserve on top of the butter cream. Top with the remaining pie halves, dust liberally with confectioner's sugar and your whoopie pies are ready to enjoy.
