Ingredients

  • Fresh pods of okra (pick the small young ones) Adjust recipe depending on amount of okra you have.
  • Several eggs scrambled
  • 2 cups corn meal (white or yellow) + or - depending on amount of okra
  • 1/2 cup flour
  • salt and pepper to taste (put plenty of salt)
  • Tony Cachere's seasoning to taste
  • Peanut oil

Preparation

Step 1

In a large bowl mix cornmeal, flour and seasonings. Set aside.
Remove heads from okra and slice into 1/2" pieces.
In another large bowl crack 3 to four eggs and scramble. Add okra to eggs and let sit for about 10 mins. Make sure all okra pieces are covered with egg.
Drain egg from okra in colander and then toss in cornmeal mixture.
Heat peanut oil to 350 degrees and add enough okra to cover surface. Fry until golden brown. (approx 10 mins) Remove okra and bring oil temp back up to 350. Add more okra and continue until all okra is fried to a golden brown.
