Ingredients
- 1 , 15 oz can chickpeas, rinsed & drained
- 2 tbsp chopped fresh basil
- 2 tbsp chopped fresh Italian parsley
- 2 tbsp fresh lemon juice
- 4 tsp extra-virgin olive oil
- 1 small garlic clove, pressed
- 1/3 cup packed fresh grated Parmesan cheese
- Coarse kosher salt

Step 1
Combine rinsed and drained chickpeas, chopped fresh basil, chopped Italian parsley, fresh lemon juice, extra-virgin olive oil and press garlic clove in medium bowl. Add grated Parmesan cheese and toss gently to blend all ingredients thoroughly. Season chickpea salad to taste with coarse kosher salt and freshly ground black pepper. Can make ahead 4 hours. Serve salad chilled or at room temperature.
NOTE: Can substitute lime juice for lemon juice and feta cheese for Parmesan cheese. Can also add chopped fresh cilantro and chopped red onion or shallot.
