Ingredients
- 4 medium sized russet potatoes, washed
- 1/4 cup melted butter
- 2 teaspoons finely chopped garlic
- 8 (3/4 oz.) slices sharp cheddar cut into 6 pieces
- 2 Tablespoons finely chopped chive
- Salt and pepper, if desired

Step 1
With pencils or chopsticks on either side of potato, slice each potato width-wise down to the pencil--being careful not to cut all the way through--every 3/8 to 1/4" wide. Place potatoes on a plate and microwave 5 minutes. Rotate potatoes and microwave another 5 minutes.
Place potatoes on a large enough pan so you have room to put the cheese in all the slices before serving! Combine melted butter and garlic in bowl, then brush over potatoes and into slices.
Bake in preheated 425 degree oven for 40-45 minutes. Remove when fully cooked, and place the sliced cheese in all the slices and return to oven to melt. Top with chives and serve! LOOK BEAUTIFUL!
