Ingredients

  • 2 lbs. ground beef
  • salt & pepper to taste
  • 1/2 cup chicken broth
  • 10 flour tortillas
  • 1 jar salsa
  • 1 lb. shredded Mexican cheese
  • 8 oz. sour cream
  • 2 cans diced jalepenos

Step 1

Preheat oven to 375F

Coat two 8" cake pans with cooking spray. Brown meat over medium heat and season with salt and pepper. Set aside.

Pour chicken broth into a large shallow dish and add tortillas. Soak for 5 mins. until soft but not mushy. Set aside. Reserve 1/2 cup salsa and 1 cup cheese. Place 1 tortilla on bottom of each cake pan.

In each pan layer as follows: spread 2 T. sour cream over tortilla, sprinkle 2 T. jalepeno over sour cream, followed by 1/2 cup meat, 2 T salsa and 1/3 cup shredded cheese. Top wit tortilla and repeat 3 more times. Finish with a tortilla on top. Divide reserved salsa and cheese between 2 pans, spreading salsa over tortilla and sprinkling cheese on top. Spray 1 side of foil with pam and place oiled side down on top of pans. Bake 30 mins. at 350F until hot and bubbling around edges
