Ingredients
- vegetable oil for brushing pans
- 4 ripe red plums
- 3 eggs, separated
- 5 1/2 Tbs (70 grams) superfine sugar
- 1/2 cup plus 1 Tbs (70 grams) all purpose flour
- 1 tsp vanilla extract
- 2/3 cup (150 ml) heavy cream
- pinch of salt
- 1/2 vanilla bean
- confectioners' sugar, for dusting

Preparation
Step 1
Preheat oven to 325 degrees. Take 6 small baking dishes or pans, roughly 4" in diameter and 3/4" deep and brush lightly with oil. Line with parchment paper disks that come 2/3" above rim of each dish.
Halve plums, remove pits, cut each half into 3 or 4 wedges. Arrange half the fruit over bottom of lined dishes and set rest aside.
To make batter, whisk/beat egg yolks with with half the sugar until thick and pale. Use rubber spatula to fold in first the flour and then vanilla extract, cream, salt. Slit vanilla bean lengthwise and scrape out all seeds, add to batter.
Whisk egg whites with remaining sugar until stiff, but not dry, peaks. Fold gently into batter. Pour batter over plums to reach about 3/4 of way up paper liners. Place in oven 15-20 minutes. Take out and quickly arrange remaining plums on top, slightly overlapping. Continue to bake 5 minutes, until skewer inserted in center comes out dry. Allow to cool slightly before removing from pans. Dust with a little confectioners' sugar.
