26/10/13 - This was astounding for both! I used one piece of boneless chicken breast and 4 Tien-Tsin chilies. It could take more heat - try 5 next time.
07/01/17 - UPDATE. Made in Actifry which works great and results in very tender chicken. However, again, I used 4 Tien-Tsin chilies and there was very little heat. Also, the peanuts were a bit on the old side and wound up being soggy so watch that. Cashews would be great too, I'm sure.

Ingredients
- SAUCE:
- 1/2 tbsp. cornstarch
- 1/2 tbsp. soy sauce
- 7 - 8 oz. boneless, skinless chicken breasts, cubed
- 1 1/2 tbsp. soy sauce
- 1 1/2 tbsp. shaoxing (Chinese rice wine) or dry sherry
- 1 tbsp. Brown sugar
- 1 1/2 tbsp. chicken stock
- 2 tsp. chiangang (Chinese black vinegar) or balsamic vinegar (Balsamic works if you don't have the other)
- 1/2 tbsp. Asian sesame oil
- 1 tsp. Chinese dark soy sauce
- STIR FRY:
- 1 - 1 1/2 tbsp. peanut or canola oil
- 4 - 6 dried hot red chiles, stemmed, halved crosswise, and seeded
- 3 scallions, white part only, thickly sliced crosswise
- 1 large clove garlic, peeled, ends trimmed off, and thinly sliced
- 1/2 " piece ginger, peeled and minced
- 1/4 cup shelled raw skinless peanuts

Preparation
Step 1
* Mix together cornstarch and 1/2 tbsp. of the soy sauce in a medium bowl, add chicken, toss well, and set aside to marinate for 30 minutes. Meanwhile, mix together the remaining soy sauce, rice wine, sugar, stock, vinegar, sesame oil, and dark soy sauce. Set aside.
* Heat peanut oil in a wok over high heat until just beginning to smoke. Add chiles, the scallions, garlic, ginger, and chicken and stir-fry until chicken is golden, 3-5 minutes. Add soy sauce mixture and stir-fry until sauce thickens, about 2 minutes. Stir in peanuts and serve with rice of choice (White recommended).
* *TO MAKE IN ACTIFRY:*
* Marinate chicken and prepare sauce as above.
* Add chilies, white part of the scallions, garlic, ginger, and chicken to Actifry and cook for 10 minutes (This is a perfect amount of time). Add sauce mixture and cook 2 minutes. Stir in peanuts and green onion tops and cook 2 - 3 minutes longer until sauce thickens and chicken is done throughout.
