Ingredients
- 1/2 c butter, softened
- 1 c flour
- 1/4 c sugar
- Filling
- 2/3 c dried apricots
- 1 c water
- 3 egg yolks
- 3/4 c packed brown sugar
- 1/2 c flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- ICING
- 1 3/4 c icing sugar
- 1/4 c butter
- 1 1/2 tsp grated lemon rind
- 1 Tbsp lemon juice
- 1/4 c butter 1

Preparation
Step 1
Press onto bottom of a 9 In pan
Bake at 325 for about 20 min-until golden
Dice apricots into small pieces and bring to a boil. reduce heat and simmer about 20 min-until most of the water has been absorbed and apricots are tender, set side
Beat egg yolks 1 min add brown sugar and beast 1 min. Stir in flour, baking powder and salt
Mix well; blend in apricot mixture; spread over base Bake 30-40 min or until top springs back
Beat icing sugar into butter to make a smooth spreadable consistency. Blend in lemon rind and juice
