Ingredients

  • 1 cup Greek yogurt
  • 1 cucumber, peeled, seeded, grated
  • 3 tbsp finely chopped fresh mint
  • 1 tsp finely grated lemon zest
  • 2 tsp fresh lemon juice
  • salt and pepper
  • 1/2 recipe ground meat mix (1.75 lbs)
  • 3/4 cup crumbled feta cheese
  • 1 tbsp finely chopped fresh oregano
  • 1/4 tsp crushed red pepper flakes
  • olive oil

Preparation

Step 1

Make sauce:
mix together yogurt, cucumber, mint, lemon zest and juice, add big pinch salt in a medium bowl, season with pepper.
Make meatballs:
gently mix together meat, feta, oregano and red pepper flakes in a bowl. Form into thirty 1.25 inch meatballs. Slide 5 meatballs onto each of 6 metal skewers.
Preheat broiler, with rack in top third of oven. Lightly brush a rimmed baking sheet with oil. Broil skewers on sheet until cooked and golden, 8 minutes. Serve with sauce.
