Ingredients

  • for a 10x20 cm plum cake mold
  • 170g softened butter
  • 170g caster sugar
  • 1 tbsp finely grated lemon peel
  • 3 eggs
  • 1 1/2 tbsp limoncello
  • 175 g of flour
  • 3/4 tsp baking powder

Preparation

Step 1

preheat the oven to 170 c and butter and flour a plum cake mold. in a bowl with the whips, work the sugar, butter and lemon zest until the mixture is light and creamy. add the eggs and limoncello gradually beating well. sift the flour and baking powder on the mixture with the butter and mix well. now pour the mixture in the mold and cook for 45 mins, checking the cooking with a toothpick. remove from the oven, and let it cool in the mold for 5mins, then unmold and leave to cool to on a grill.
