Spruce Grady's Chicken-Fried Steak

Ingredients
- 1 1/2 cups flour
- 2 t. kosher salt
- 2 t. pepper
- 4 T. paprika
- 2 eggs
- 1/2 cup buttermilk
- 1/2 cup Shiner Bock or other bock beer
- peanut oil, enough to cover meat halfway
- 4 tenderized round steaks
- Cracked-Pepper gravy (recipe follows)

Step 1
Mix first 4 ingredients and set aside on a plate. Whisk eggs in a large bowl; add milk and beer. Set aside. In a deep, heavy skillet, heat oil to 350 deggrees. Meanwhile, dredge steaks in flour, then eggs, then flour again, evenly coating the batter so it is dry on the outside. When oil is 350, gently slide one steak into the oil. Cook about 3 minutes on each side. Drain on paper towels. Do each steak this way, then hold in a 225 degree oven till all are done. Serve with the Cracked-Pepper Gravy.
Gravy
1/2 cup butter
5 T. flour
2 1/2 cups whole milk
1 1/2 t. kosher salt
4 t. cracked pepper (I only used 1.)
Melt butter in a heavy saucepan over low to Med.-low heat. Add flour, whisking continuously until it cooks, becoming a fragrant light brown. Slowly add milk, whiskiing to keep lumps from forming. Season with salt and pepper and simmer for 10 minutes.
