BEEF - Bacon & Brisket Burgers

These are super. If you're going to make burgers, these are the ones (provided you can get the ground brisket)

Ingredients
- 1 1/2 lbs. ground beef brisket (from Tarini's)
- 6 slices thick cut Tarini's bacon (regular or garlic pepper or combination)
- 2 teaspoons EVOO
- salt and pepper to taste
- brioche buns, to serve
- mustard, mayo, arugula, old cheddar cheese, etc. for serving

Preparation
Step 1
Finely chop bacon or mince it in the mini food processor. Combine with the beef and some salt and pepper. Mix lightly and divide into two portions, freezing one.
Shape remaining half into three equal patties, making an indentation in the centre.
Brush lightly with olive oil and salt and pepper both sides. Refrigerate until ready to cook, removing from the fridge 1/2 hour before serving.
Heat a non-stick skillet over medium-high heat with a lid until hot. Add patties and cook for a few minutes on each side, turning pan as needed, until done to your liking. Add a slice of cheese to mine for the last minute or so. If Dan's having cheese, top his burger with it just before serving.
Remove to a plate and keep warm.
Lightly toast the buns and sop up the pan juices with them then top with the patties and toppings of choice and serve.
