Ingredients
- Boiling water
- salt
- ice
- 2 lbs fava beans
- 1 T butter
- 1 t. olive oil
- 2 cloves minced garlic
- Salt & pepper

Preparation
Step 1
Shell beans by running edge of knife along seam.
In large saucepan bring water to boil, then add salt, enough to imitate seawater
Set aside a large bowl of ice water
Add shelled beans to boiling water & boil @ 3 min. Remove from pan & immerse in ice water.
After beans cool, peel outer skin.
Over med. heat melt butter & olive oil, add garlic & saute for 1 min. Add fava beans & saute for @ 5 min. Season to taste with salt & pepper & serve
