Ingredients
- 2 C sugar
- 4 eggs,
- 1 C vegetable oil
- 3 C all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 2 C diced, golden delicious apples (about 2 medium sized)
- 1 C dark seedless raisens
- 1 1/4 1/4 C chopped walnuts
- Apple glaze

Preparation
Step 1
Preheat oven to 350 degrees.
Generously grease a 10 inch bundt pan or a 13 x 9 inch pan.
In a mixer bowl beat together sugar and eggs for 5 minutes on medium speed, occasionally scraping the bowl with a rubber spatula; slowly beat in vegetable oil, mix until well blended.
Reduce speed to low; beat in flour, baking soda, salt, cinnamon and vanilla extract. Continue mixing until well blended; occasionally scrape the bowl.
Fold in apples, raisins and 1 cup of the walnuts by hand.
Spoon the batter into the prepared pan.
Bake 60 to 70 minutes for a bundt pan or until a tooth pick comes out clean
Alow to cool in pan 10 minutes then remove from pan to cool completely on a rack
OR
Bake 25 to 35 minutes for a 13 x 9 inch pan or until a tooth pick comes out clean
Remove from oven and allow to cool completely in the pan.
Apple Glaze:
In a medium bowl stir 1 1/2 C of confectioners sugar and 2 TBLS apple juice or water until smooth.
Spoon over cooled cake and allow to run down the sides.
Sprinkle remaining 1/4 C walnuts over the top.
