BASMATI****Cilantro Lime Rice

29/10/13 - Great for both and easy enough to throw together on a week night. We had it with Ginger-Poached Salmon with Teriyaki Drizzle but it should go equally well with something Mexican.
26/01/17 - UPDATE - served it with Taco Spice ActiFry chicken cubes - vvg again (Dan doesn't like the cilantro so add it to your rice only)

BASMATI****Cilantro Lime Rice 1 Picture

Ingredients

  • 1 teaspoon sesame oil (if serving with Asian) or olive or avocado oil (if serving with Mexican)
  • pinch of salt and freshly ground pepper to taste
  • 1/2 rice-cooker cup (6 tablespoons) basmati or jasmine rice
  • juice and zest of 1 lime
  • required amount of chicken broth
  • 1/8 teaspoon ground cumin
  • 2 Tablespoons finely chopped cilantro

Preparation

Step 1

* Add all ingredients except cilantro and lime to rice cooker and set for white rice, one cycle. When done, fluff with fork and mix in lime zest and juice and chopped cilantro.
