Ingredients
- 1 pound ground beef
- 1 pound ground pork
- 1 small onion, grated
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup panko crumbs
- 2-3 splashes Worcestershire sauce
- 2 tablespoons minced fresh parsley
- 1/4 cup milk
- 2 eggs, lightly beaten
- 2 c. shredded cheese (Cotswold)
- Ketchup
- 1 sheet thawed puff pastry
- 1 egg beaten with 1 tab. water

Step 1
Preheat your oven to 375 F.
Prepare the meatloaf by combining all ingredients together in a large bowl. Mix until incorporated. Don’t over handle the mixture or the meatloaf may be too dense.
Lightly spray (4) mini loaf pans with nonstick cooking spray. Divide dough into fourths. Pat into mini loaf pans, drizzle ketchup on top. Bake for about 40 minutes, until the meat is cooked through. Remove loaves from pans; drain on paper towels. Place on a greased 13-in. x 9-in. baking pa or place on Silpat sheet.
Roll out pastry sheet and cut into fourths.
Cover top and sides of eachmeat loaf with dough; trim excess. Brush w/ egg wash.
Bake 10-15 minutes longer or until pastry is golden brown.
