Ingredients
- 1 9" pie crust, cooked
- 8 oz Bacon, 1/2 dice, cooked crisp
- 2 Eggs
- 2 Egg yolks
- 1 C Milk, whole
- 1 C Cream
- 1/2 t salt
- 1/2 t pepper, white
- Pinch Nutmeg
- 4 oz Gruyere, grated (1/2 C)

Preparation
Step 1
Oven 375 Bake assembled quiche 35-40 minutes at altitude
Spread bacon/cheese in crust. Mix egs, milk, cream plus remaining in bowl. add to crust
Variations: Omit bacon/cheese. Reduce milk/cream to 3/4 c each.
Crabmeat: Add 2 T dry sherry + pinch cayenne. 8 oz (1/2 C) Crabmeat + 2 T chopped chives
Leek/Goat cheese: 2 C sauted leeks. 4 oz goat cheese smaal pieces.
Ham/Asparagus: Blanch 8 asp 1/2" cut (1 C). 4 oz ham 1/4" dice.
