Ingredients
- 5 cloves garlic, peeled and smashed
- 1/4 ts salt
- 2 egg yolks, room temperature
- 1 cup evoo
- 1 TBS lemon juice
- freshly ground pepper

Step 1
mince garlic with salt, then mix thoroughly with the egg yolks. Add the olive oil in a thin stream, stirring constantly, allowing the paste to emulsify. Sir in the lemon juice, zest and season with pepper.
