  • 1 ½ lb fresh green beans
  • 3 tblsp olive oil
  • 2 cups chopped yellow sweet peppers
  • ½ cup chopped onion (1 medium)
  • 2 cloves garlic, minced
  • 1 tblsp fresh basil
  • 1 tsp fresh marjoram
  • 1 tsp fresh thyme leaves
  • Parmesan cheese for garnish

Step 1

Trim green beans and place in a large pot of boiling water; cook for 3 minutes. Remove and plunge into a bowl of ice water. When beans are cool, drain on clean kitchen towels.

In an extra-large skillet heat olive oil over medium heat. Add peppers, onion, garlic; cook for 3 minutes, stirring occasionally. Stir in green beans and simmer, covered, about 5 minutes or until beans are crisp-tender. Add snips of basil, marjoram and thyme leaves and transfer to a serving platter. If desired, use a sharp vegetable peeler to shave a few ounces of cheese over mean mixture; toss gently.
