Ingredients
- 1 Tbsp Olive Oil
- 1 1/2 lbs Chicken tenders skinless
- 1 red onion chopped
- 2 garlic cloves - minced
- 1 14 oz Can Reduced sodium chicken broth
- 1/2 tsp poultry seasoning
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- 1/4 tsp salt
- 3/4 cup Uncooked yellow rice
- 1 15 oz can black-eyed peas - rinsed and drained
- 1 Tbsp Chopped fresh thyme

Preparation
Step 1
In a large skillet over medium heat, add the oil. Add the chicken and cook until browned on both sides - about 4 minutes. Remove to plate and set aside.
In the same skillet, add the onion and garlic and cook until soft, stirring frequently, about 4 minutes. Stir in the broth, poultry seasoning, black pepper, red pepper and salt and bring to a boil. Stir in the rice. Reduce heat to low, cover and cook until the rice is almost tender, about 15 minutes. Stir in the black-eyed peas and thyme. Top with reserved chicken. Cover and cook until heated through, about 10 minutes.
