Spinach & Potatoes Au Gratin

Ingredients

  • 4 med. red potatoes, cut into 1/4" slices
  • 1 bag, 8-9oz baby spinach
  • 2 tbsp. melted butter
  • 1/4 tsp. salt, divided
  • 1/8 tsp. pepper, divided
  • 1/2 c. whipping cream
  • pinch nutmeg
  • 1/2 c. grated Parm cheese

Preparation

Step 1

Preheat oven to 350. Grease med. baking dish; arrange half of potato slices in dish.
Place spinach in large saucepan; add water to cover. Bring to boil for 1 min; drain. Rinse under cold water; squeeze out excess moisture. Place half of spinach on potato slices. Drizzle w/ melted butter. Sprinkle w/ s&p. Repeat layers. Combine cream and nutmeg in small bowl; pour over spinach. Bake 40-50 mins. or till potatoes are crisp. Remove from oven; sprinkle w/ cheese. Bake 15 mins. or till cheese is lightly browned and potatoes are tender. If cheese browns too quickly, cover lightly with foil and finish baking.
