Ingredients

  • Olive Oil
  • 1 1/2 c. chopped red onion
  • 3 garlic cloves
  • 1 yam, skinned and diced
  • 1/2 cup chopped celery
  • 1 jalapeno, seeded and minced
  • 1 red pepper diced
  • 2 cups brown rice
  • 1 T. ground cumin
  • 1 T. ground coriander
  • 2 tsp. chili powder
  • 4 c. vegetable stock
  • 1 bay leaf
  • 1 1/2 c. cooked red beans
  • 1 can Rotel tomatoes or 1 1/2 c. chopped tomatoes
  • fresh cilantro

Preparation

Step 1

Heat 1-2 T. of olive oil in a medium-sized pot over medium heat. Saute onion, garlic, yams, celery, jalapeno, and red pepper. Stir in rice, cumin, coriander, and chili powder until nicely blended.

Add the stock, bay leaf, red beans, and tomatoes. Bring to a boil, then cover and simmer for 40-45 minutes or until the liquid is absorbed.

Serve with chopped cilantro.

Serves 6
