Ingredients

  • 1 cup Butter, softened
  • 1 cup Sugar
  • 1 cup Packed Light Brown Sugar
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 2 1/2 cups All-purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/8 tsp Salt
  • 2 cups Flaked Coconut
  • 1 1/2 cups Milk Chocolate Chips
  • 1 cup Macadamia Nuts, coarsely chopped (so that large chunks are incorporated into the cookies

Preparation

Step 1

1. In a large mixing bowl, cream butter, sugar and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
2. In a medium bowl, combine the flour, baking soda, baking powder and salt; gradually add to the creamed mixture. Stir in the coconut, chocolate chips and nuts. Chill dough 15 minutes.
3. Shape dough into 1 1/2" balls.
4. Place balls 3" apart on parchment-lined baking sheets. Bake at 350 degrees for 12-13 minutes until lightly browned. Remove from oven and cool on baking sheet for several minutes. Remove cookies to wire rack to cool completely.

Helpful Tips:
Return the dough to the refrigerator in between baking the cookies on baking sheets.
