Creamy Tomato Soup Instant Pot

Ingredients

• 3 lbs tomotes - chopped
• 1/2 sweet onion diced
• 1 C shredded carrots
• 2 cloves of chopped garlic
• 1 t oil or butter
• 2 basil leafs
• 1 C chicken stock
• 1 T tomato paste
• salt and pepper to tast
• 1 C heavy cream

Preparation

Step 1

Chop tomatoes, onions, garlic and basil
Shred carrots
Turn Instant Pot on Saute
Add butter or oil and onions, garlic, carrots and basic and salute until brown
Turn off Saute
Add chicken stock, tomato past, and chopped tomatoes. Salt and pepper to taste
Turn on soup function for 20 minutes. Natural release for 10 minutes.
Mix in heavy cream
