Ingredients

  • 4 ounces of good aged Anejo tequila
  • Juice from 4 large limes
  • Small bunch of cilantro well washed and chopped
  • 6 T TOOC Habanero Olive Oil
  • Zest from 2 oranges
  • 2 minced jalapenos
  • 1 T honey or agave nectar
  • 3 lbs large shrimp –cleaned and deveined
  • 2 sweet onion cut into large pieces
  • Whole garlic cloves
  • 3 oranges peeled and sectioned (approx.)
  • 3 limes sectioned (approx.)
  • Skewers for BBQ.
  • Note: if using wooden skewers be sure to soak in water for at least one hour prior to grilling.

Preparation

Step 1

Combine the first 8 ingredients and allow the shrimp to marinade for at least 2 hours

To prepare: On the skewers alternate, shrimp, garlic cloves, citrus wedges and onions. Grill on a hot grill over indirect heat until shrimp are pink and slightly curled.

Serve immediately.
