Ingredients

  • 10 spears asparagus, trimmed and cut into bite-sized pieces
  • 1 ounce Canadian Bacon, diced
  • 1 tsp. EVOO
  • 2 eggs
  • 1 tsp. fresh thyme or other herb, if you feel like it
  • salt and pepper to taste
  • 20 grams cheese - I used Emmenthal

Preparation

Step 1

* *Steam* or saute asparagus until tender-crisp, drain and set aside.

* Add Canadian bacon and oil to a pan and stir to coat and cook for a couple of minutes over medium heat. Pour in beaten egg, seasoned with salt, pepper and optional herbs and reduce heat to medium-low, and continue cooking, lifting the edges so the uncooked egg will flow underneath, until mostly set, about 30 seconds more.

* Sprinkle asparagus and cheese over the omelet. Cover, reduce heat to low, and cook until the egg is completely set and the cheese is melted, about 2 minutes. Fold over using a spatula and serve.
