Preheat oven to 200°F.

Line 2 baking sheets with parchment paper (not wax paper). Place apple slices in a single layer on paper; sprinkle with sugar and cinnamon.

I have been making dried apple slices for years in my dehydrator. But I dip them in a bowl of unsweetened apple juice, shake off the excess, place them on the dehydrator racks and then turn on the dehydrator til apples are dry. I place them in glass quart jars and have them to use when the mood strikes. I like to purchase apples in the fall at the local orchards. Sweet potatoes are delicious this way also. Saves on the sprinkling of sugar.

Made a version of this last year with my daughter. We cut the apples thin by using a mandolin I already had. Then we baked at 200 degrees on wire racks that have small openings (like cookie cooling racks) placed on top of cookie sheets so that it's dehydrated from above and below the apple slices. I can't remember how long we dried them, kept checking until crisp. They were delicious.
