Ingredients

  • Topping:
  • 1/3 cup grated Parmesan cheese
  • 2 cups diced cooked chicken
  • 1/2 cup shredded mozzarella cheese
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 2 cloves garlic, minced
  • 1 can (14 1/2 ounces) diced tomatoes with juice
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup shredded mozzarella cheese

Preparation

Step 1

Preheat oven to 400ºF. Coat a 9-inch round pie pan with cooking spray and sprinkle the Parmesan cheese evenly over the bottom.

Scatter the chicken over the cheese. Top with the 1/2 cup shredded mozzarella cheese, oregano and basil. Mix the garlic with the diced tomatoes with their juice and spread evenly over all.

Topping:
In a small bowl, mix together flour, baking powder and salt. Whisk in the oil, milk and eggs, and continue whisking until mixture is smooth like pancake batter.

Pour the batter over the chicken mixture in the pan. Bake, uncovered, for 35 minutes or until set. Remove from the oven and immediately sprinkle with the 1/2 cup mozzarella. Let stand 10 minutes before serving.
