Ingredients
- 1/3 cup cooking oil
- 1/4 cup flour
- 3 tablespoons butter
- 6 cups sliced fresh mushrooms
- 3/4 cup finely chopped onion
- 3/4 teaspoon dried thyme, crushed
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 cups beef broth
- 1/3 cup cornstarch
- 3 cups milk, half-and-half, or light cream

Preparation
Step 1
In a 4 1/2-quart Dutch oven, combine first 3 ingredients and cook, stirring, over medium heat until golden brown. Stir in the sliced mushrooms, onion, thyme, salt and pepper. Cook, stirring until onion is tender.
Combine beef broth and 1/3 cup cornstarch. Add to mushrooms mixture along with 3 cups of milk, half-and-half or light cream.
Cook and stir until thickened and bubbly. Cook 2 more minutes.
Can be divided into three 2 2/3 cup portions freezer containers. Use as needed.
