Ingredients
- crust:
- 10 oz choc wafers, crushed
- 1/4 cup sugar
- 1/4 cup butter
- 1 cup pecans, chopped
- cream cheese filling:
- 3/4 cup sugar
- 24 oz cream cheese, room temp
- 6 eggs, room temp
- 6 oz semi sweet chocolate
- 1 1/2 cups sour cream
- 1/4 cup brown sugar
- 2 T cornstarch
- 1 t vanilla extract
- 1 t almond extract
- glaze:
- 8 oz semisweet chocolate
- 3/4 cup powdered sugar
- 1/4 cup butter
- 3 T water
- 1 t vanilla extract
- 1 t almond extract

Preparation
Step 1
crust:
melt butter in microwave
in mixing bowl combine cookie crumbs, butter and sugar, blend well. press onto bottom and sides of cheese cake pan.
place pecans on top of crust and set aside.
cream cheese filling:
preheat oven to 325 degrees
combine 24 oz cream cheese with both sugars. beat medium speed till smooth and fluffy. put one egg at a time and then cornstarch and extracts.
stir in melted chocolate and sour cream.
place over crust.
place pan in larger pan half filled with water. bake 70 minutes.
middle of the cake should be 160 degrees before you turn off oven.
leave cake in oven for 30 minutes. open oven door and leave in oven another 30 minutes.
let cool at room temp for an hour.
cover and put in frig for 8 hours.
glaze: combine melted chocolate and butter together. stir in rest of ingredients till smooth. spread over cheesecake while glaze is warm.
