Ingredients
- Non stick cooking spray for the pan
- 1/3 cup vegetable oil
- 1 1/4 cup granulated sugar
- 2 large eggs beaten
- 3 large very ripe bananas mashed with a fork
- 1 1/2 cup all purpose flour (White Lily if available)
- 1 tsp baking soda
- 1/4 tsp salt
- 1/3 cup buttermilk

Step 1
Preheat oven to 350F. Spray a 9x5 in loaf pan with nonstick spray. Cream the oil and sugar together in the bowl of an electric mixer until light and creamy. Beat in the eggs. Add the bananas and mix well. Add the remaining flour and then the buttermilk and mix just until blended. Pour the batter into the pan, smooth the top, and bake for 45 minutes or until a toothpick comes out clean when inserted into the center of the bread. Cool in the pan for 5 minutes then invert ont a wire cooling rack.
