Ingredients
- 1 pound Bucatini
- salt
- 4 tablespoons unsalted butter
- 1 small onion – minced
- 1/4 cup all purpose flour
- 2 1/2 cups stock
- 1/8 teaspoon cayenne pepper
- 1 1/2 cups fresh mozzarella – cubed
- pepper

Preparation
Step 1
1. Preheat oven to 350 degrees.
2. Place a large pot of generously salted water onto boil. When boiling, add bucatini and cook just shy of al dente. Drain, set aside.
3. Into a large saute pan, add butter and melt over medium-low heat. Add onions and saute until translucent. Add flour, and cook for an additional minute, stirring constantly. Gradually add in stock, whisking as you go. Season with salt, pepper and cayenne.
4. Spray an oven proof dish {large enough to accommodate your pasta/sauce} with cooking spray.
5. Add pasta to saute pan. Carefully toss pasta to combine. Transfer pasta to oven proof dish.
6. Add Mozzarella and toss to combine. Bake for approximately 20-25 minutes until bubbly.
