Ingredients

  • 1 TBL vegie oil
  • 1 onion, chopped fine
  • 4 garlic cloves, minced
  • 6 C water
  • 1 (2 1/2 - 3 LB) boneless smoked pork shoulder roast, cut into 4 pieces
  • 1 LB pink beans, soaked overnight & drained (pinto if can't find)
  • 1 C ketchup
  • 1/2 C packed dark brown sugar
  • 1/4 C spicy brown mustard
  • pepper
  • YOU CAN USE BONELESS SMOKED HAM IN PLACE BONELESS SMOKED PORK SHOULDER

Preparation

Step 1

SEASON BEANS:
adjust oven rack to middle position & heat oven to 350
heat oil in Dutch oven over med heat until shimmering
add onion & cook until softened, abt 5 min
stir in garlic & cook until fragrant, abt 30 seconds
add water, pork & beans
bring to boil
cover, transfer to oven
cook until beans are just beginning to soften, abt 1 hr

FINISH BEANS
stir in ketchup, brown sugar & mustard
bake, uncovered until beans are completely tender & sauce is slightly thickened, 2-3 hrs
remove pork from pot & transfer to plate
when cool enough to handle, cut pork into bite size pieces & return to pot
discard fat
season w/ pepper
serve

BEGIN CHECKING FOR DONENESS AFTER 2 hrs OF UNCOVERED BAKING
IF SAUCE HAS THICKENED BUT BEANS ARE NOT YET TENDER, ADD UP TO 1 1/2 c WATER & CONTINUE BAKING.
