Veggie Couscous

Simple side dish with vegetables; turn it into a main dish by adding chicken.

Ingredients
- 1 cup uncooked Tri-Color Couscous
- 1 1/4 cups water
- 1/4 teaspoon salt (optional)
- 1 teaspoon butter (optional)
- 1 tablespoon EVOlive Oil
- vegetable quanity based on your selection-
- fresh spinach, chopped
- french cut green beans, frozen
- sliced carrots, frozen coins
- cauliflower
- corn, frozen

Step 1
In saucepan bring water, salt and butter to a boil. Add Couscous, stir quickly. Remove from heat and cover. Let stand for 4-5 minutes. Fluff with a fork before serving.
In seperate non-stick skillet, add Olive Oil pre-heat, add veggies and stir fry until desired tenderness. Add cooked Couscous, mix well.
Top with Grated Parmesan to taste.
Optional: add finely sliced, cooked chicken breast while stir frying veggie mix.
