Ingredients

  • 1 cup uncooked Tri-Color Couscous
  • 1 1/4 cups water
  • 1/4 teaspoon salt (optional)
  • 1 teaspoon butter (optional)
  • 1 tablespoon EVOlive Oil
  • vegetable quanity based on your selection-
  • fresh spinach, chopped
  • french cut green beans, frozen
  • sliced carrots, frozen coins
  • cauliflower
  • corn, frozen

Step 1

In saucepan bring water, salt and butter to a boil. Add Couscous, stir quickly. Remove from heat and cover. Let stand for 4-5 minutes. Fluff with a fork before serving.

In seperate non-stick skillet, add Olive Oil pre-heat, add veggies and stir fry until desired tenderness. Add cooked Couscous, mix well.
Top with Grated Parmesan to taste.

Optional: add finely sliced, cooked chicken breast while stir frying veggie mix.
