Ingredients
- CUPCAKES:
- Chocolate Cupcakes
- 3/4 c chopped pecans
- 1 pint (2 c.) heavy whipping cream
- CARAMEL SAUCE:
- 1/4 c. butter
- 1/2 c. packed brown sugar
- 2 tbsp light corn syrup
- 1 tbsp milk
- TOPPING:
- 2 medium vanans
- 24 pecan halves

Step 1
Make Chocolate Cupcakes as directed in recipe except-stir chopped pecans into batter. Bake and cool as desired.
In chilled large bowl, beat whipping cream with electric mixer on high speed until stiff peaks form; set aside. Cut cupcakes horizontally in jalf.
In 1 qt saucepan, melt butter over medium-high heat. Stir in brown sugar, corn syrup and milk. Cool 5 mintues.
Spread 1 heaping tbsp whipped cream on each cupcake bottom. Thinly slice banans; place 2 slices on top of whipped cream on each cupcake. Drizzle with 1 tsp caramle sauce; replace cupcake tops. Spread remaining whipeed cream on cupcakes; drizzle with 1 tsp caramel sauce. Garnish each with pecan half.

Using a cake mix:
Substitute 1 box devil's food cake mix for the chocolate cupcakes. Make cake mix as directed on box for cupcakes. Toss 1/4c. finely chopped pecans with 1 1/2 tbsp flour; stir into batter. Bake and cool as directed on box. Continue as directed in recipe.
