Ingredients

  • Extra virgin olive oil
  • 1/2 lb thick cut bacon, cut into pieces
  • 2 garlic cloves, smashed
  • Pinch crushed red pepper flakes
  • 1/2 lb button mushrooms, stemmed and sliced
  • Kosher salt
  • Freshly ground black pepper
  • 1-2 lbs green beans, stems removed
  • 1 C beef stock

Preparation

Step 1

Coat a large straight sided skillet lightly with olive oil. Add the bacon, garlic and red pepper flakes over medium heat. Cook until the bacon has gotten brown and crispy and has let off most of the fat. When the garlic becomes golden brown, remove and discard. (Leaving the garlic in past this point will result in a bitter, burnt garlic taste - not what you want.)

Add the mushrooms to the pan, season with salt and pepper to taste, and cook until they become soft, about 3 minutes. Add the green beans and the stock. Cover and cook over medium-low heat for 40 to 45 minutes. Check frequently during cooking, turning the beans over and coating them in the sauce and bacon.

When done, the beans will be very tender, near to falling apart and very flavorful.
