Ingredients
- Oil
- 1/2 tsp green cardaman
- 1 red onion (chopped)
- 1 1/2 tbsp ground ginger
- 1 1/2 tbsp ground garlic
- 1 lb chicken breast or thighs (cut up into chunks)
- 1/2 tsp red chili powder
- 1 tsp tumeric
- salt
- 14 oz tomato paste
- water
- 1/2 tsp garam masala
- green chilis (chopped) *if desired
- fresh ginger (chopped)
- fresh cilantro (for garnish)

Preparation
Step 1
1. Place oil in pan and add green cardaman.
2. When hot, add onions and sauté 5-10 minutes until brown.
3. In a small bowl, combine the garlic powder, ground ginger and a bit of water until a paste forms.
4. Add approx. 2-3 tbsp of ginger/garlic paste to the pan.
5. Add chicken, red chili powder, tumeric, and salt.
6. Add tomato paste and sauté the mixture for a few minutes.
7. Add enough water to cover to cover the mixture completely.
8. Cook on medium for 10-20 minutes with lid until chicken is cooked. Stir frequently. (Feel free to add more water as needed depending on the amount of gravy you want.)
9. When chicken is cooked, add approx. ½ tsp. garam masala, green chilis to taste (can delete if you don’t want heat), chopped ginger, and fresh cilantro. Serve with rice or lentils.
