Ingredients
- 2 Large eggs
- 1 bottle light or medium lager cold (12 oz)
- 2 1/2 cups all-purpose flour
- coarse salt
- 5 cups vegetable oil
- 2 cups buttermilk if doing onions
- 2-3 lbs shrimp or fish

Preparation
Step 1
Whisk eggs in medium bowl until smooth, wisk in beer.
Add 1 1/2 cups flour and 1 1/2 tsp salt. Wisk until combined.
Put remaining 1 cup flour into shallow bowl.
Put wire rack over rimmed baking sheet near stove.
Heat oil in dutch oven to 350 degrees. coat food lightly in flour then dip in batter, gently shake off excess.
Fry until browned, turn halfway through - about 5 minutes.
With slotted spoon, transfer food to rack to drain. Season immediately with salt.
Keep warm in oven at 200 degrees.
