  • CUPCAKES:
  • Chocolate Cupcakes
  • 1/2 c. sour cream
  • 1 package (3oz) cream cheese, cut into 24 cubes
  • FROSTING:
  • 1/2 c sugar
  • 2 tbsp water
  • 2 egg whites
  • 1 jar (7oz) marshmallow creme
  • 1 tsp vanilla
  • GARNISH:
  • 2 c. flaked coconut

Step 1

Make Chocolate Cupcakes as directed in recipe except-add sour cream with the vanilla. Place 1 cube cream cheese in center of each, pressing down into batter almost to center (top of cream cheese will still show). Bake and cool as directed in recipe.

In 2 qt stainless steel orother non-coated sauce, mix sugar, water, and egg whites. Cook over low heat aobut 4 minutes, beating continuously with electric hand mixer on high speed, until soft peaks form. Add marshmallow creme; beat until stiff peaks form. Remove saucepan from heat. Beat in vanilla.

Frost cupcakes. Sprinkle top of each with generous Tbsp coconut. Store covered in refriegerator.

May use cake mix. Make as directed EXCEPT- use 2/3c water, 1/2 c sour cream, 13/c. vegetable oil and 2 eggs. Place 1 cube crem cheese in center of each, pressing down into bater almost to center. Bake 22-27 minutes. Cool as directed on box, frost and garnish cupcakes as directed in recipe.
